| Food Experiment: Carrot Yokan Pie for Vegetable Love |

I wasn't planning on cooking anything this week. Between my typically hectic weeknights and preparation for a trip to Hokkaido this weekend, I didn't think I would have time; and I was probably right too. But this contest at my favorite vegan cooking blog was too enticing to simply observe passively. So last night I cancelled my plans to go to the gym to enjoy some time in the kitchen instead.
The challenge of the contest was to incorporate vegetables into a low-fat, vegan dish suitable for valentine's day. I knew I wanted to make something sweet that combined chocolate and warm colors. (I love my greens too, but they don't scream valentine.) First I tinkered around with some sweet potato ideas, but there are already so many sweet potato desserts that it felt like cheating. Eventually I decided on carrots in the context of a yokan pie.
